Considering I had zero help in doing this and it was just a tad unnecessary (I could've done my comps from home by working at home on those days), I think she'll be fine by only giving her cloud access to ample amounts of storage and a duplicate set of software on each PC to do the work (Office/Adobe/whatever). I was able to edit videos (without benefit of sound unfortunately) and do work in After Effects remotely and then go home to do touch up work on my designs when I had lag issues. It's totally doable without any extraneous software. I literally never logged into the work MBP from home (they refused to help me on VPN access.), but I could remotely VNC into my home iMac whenever I wanted to grab files to put into Dropbox. I had a similar work setup (but lacked an IT admin that wanted to deal with a Mac) and I was productive by using Dropbox to sync any media files created in Adobe and I used a mix of Google Drive and Office 365 for office document work. If she's not taking her system home (iMac/Mac Pro). Are there Mac specific software needs she has? I'd question about putting her onto something like Office 365 and the cloud for her document storage.
